Gluten Free Foods
Quite simply Gluten Free Foods are foods which are produced without using Gluten. Following a Glten-free diet means that you exclude Gluten from the food that you eat. Gluten is a protein found in wheat ( including spelt), barley and rye. It can also be used as a food additive on the form of flavouring, stabilizing or thickening agents. It is found in most types of cereals, bread and pasta. Gluten free diets are the only medically accepted form of treatment for coeliac disease, dermatitis herpetiformis and wheat allergy.
Gluten free implies a harmless level of gluten rather than a complete absence of it. Consumption of less than 10mg of gluten per day is thought not to cause a problem in susceptible individuals.
Many gluten free products are available on the NHS on prescription although the range is limited.
